Grand Rubren’s organic pastis is made to a traditional Haute-Provence recipe. This popular French spirit has an intense aniseed flavour. It’s typically served chilled as an aperitif. Mix one part pastis to five parts water to create a smooth, sippable drink.
Pastis pairs well with citrus and berry flavours in cocktails. Grand Rubren recommends mixing it with iced water and strawberry syrup. The sweet berry taste mellows the anise notes of the pastis. For a summer spritz, combine pastis with sparkling wine and a wedge of orange.
Pastis is also used in cooking. It pairs particularly well with seafood, such as prawns and mussels. You can use it to flambé scallops or make an anise-flavoured sauce for sea bass. In the south of France, some chefs add a splash of pastis to their bouillabaisse.
