It is made with a blend of Peranzana and Coratina olives, which are native to this part of southern Italy. The combination of these varieties produces an intriguing oil with a smooth, sweet flavour and a spicy, bitter aftertaste. When you open the bottle, you will immediately notice its fresh, vegetal aroma, reminiscent of artichokes, almonds and tomatoes.
