Pearl couscous is also known as giant or Israeli couscous. In this mix, some of the pearls are coloured with green spinach powder and red paprika. They look fantastic in a salad with tomatoes, cucumber and fresh herbs.

While it doesn’t have much flavour of its own, pearl couscous acts as a flavour sponge. It will soak up sauces and tangy dressings. You can also bake it in the oven with chickpeas, garlic and tomatoes to make a one-pan vegetarian meal.

Use this colourful couscous to make salads for picnics and barbecues. It’s a great base for roasted vegetables and grilled meat.
